Top 6 plant-based milk tips
Choose your plant-based milk wisely
There are so many options to choose from, such as soy, almond, oat, and coconut milk. Consider the consistency and flavor of the milk and how it will complement your recipe.
Experiment, experiment, experiment!
Don't be afraid to try different plant-based milks in your recipes to see how they turn out. You never know what delicious combinations you'll come up with until you try.
Make small adjustments as needed.
If you're using plant-based milk with a thicker consistency, you may need to adjust the amount of liquid in your recipe. Don't be afraid to play around with the ratios until you get the desired consistency.
Get creative with flavors.
Plant-based milks come in a variety of flavors, from unsweetened to vanilla to chocolate. Use flavored plant-based milks to add an extra layer of flavor to your recipes.
Plant-based combos are your friend.
One secret tip for baking with plant-based milks is to try using a combination of different plant-based milks in your recipes. This can help to balance out the flavors and add depth to your baked goods. For example, you could try using a combination of almond milk and soy milk in your cookies for a rich, nutty flavor, or mix coconut milk and oat milk in your cakes for a tropical twist. Experimenting with different combinations of plant-based milks can help you find the perfect flavor profile for your baked goods and take your baking to the next level.

So which milk do I use when and how?
The true answer to that is: it depends. Not all plant-based milks are equal.
Nearly all plant-based milks call for a 1:1 ratio. Meaning if the recipe in a non-vegan baking recipe calls for 1 cup of cow's milk, you would add 1 cup of plant-based milk.
Let's dive a bit deeper and go through each plant-based milk and see how and when to use them.
Soy Milk
- Taste: Soy milk has a neutral flavor, making it a good choice for savory and sweet recipes.
- Consistency: Soy milk has a consistency similar to cow's milk.
- Baking tips:
- Soy milk is considered the most versatile plant-based milk for baking. When in doubt, use soy!
- it's high protein content and thicker, cow-milk-like consistency make it well-suited for baking.
- Use unsweetened soy milk in savory recipes to avoid adding extra sweetness.
- Be careful when using sweetened soy milk. You might need to adjust added sugar in the rest of the recipe then.
Oat Milk
- Taste: Oat milk has a creamy and slightly sweet flavor that works well in sweet recipes.
- Consistency: Oat milk has a thicker consistency than cow's milk.
- Baking tips:
- Use oat milk in recipes that complement its creamy and slightly sweet flavor, such as cakes and cookies.
- Be mindful of the sugar! Oat milks tends to be relatively high in sugar and may not be the best choice for those looking to reduce their sugar intake.
- Personally, I find oat milk to leave an aftertaste in baked goods. I know several people for whom oat milk is their go-to choice for baking.
Almond Milk
- Taste: Almond milk has a nutty flavor that can add depth to your recipes.
- Consistency: Almond milk has a thinner consistency than cow's milk. Some brands tend to be pretty watery.
- Baking tips:
- Use almond milk in recipes that complement its nutty flavors, such as muffins and bread.
- Almond milk is my go-to plant-based milk for baking. It is generally considered to be a good all-purpose plant-based milk for baking.
- Almond milk is low in protein and might not be the best plant-based milk to use if looking for extra protein in your diet.
Coconut Milk
- Taste: Coconut milk has a rich and strong tropical flavor that works well in sweet and savory recipes.
- Consistency: Coconut milk has a thick consistency.
- Baking tips:
- Use coconut milk in recipes that complement its tropical flavors, like some cakes and muffins. Its strong flavor might not make it suitable for all recipes though!
- No vegan kitchen should be without coconut milk as it works great in desserts and savory dishes.
- Coconut milk is high in saturated fat and will add quite a bit of calories to your desserts.
Pea Milk
- Taste: Pea milk is made from yellow peas and water. It has a neutral flavor, similar to cow's milk, making it suitable for both savory and sweet recipes.

Macadamia Nut Milk
- Taste: Macadamia nut milk has a creamy and slightly nutty flavor that works well in sweet and savory recipes.
