How can you make the best chocolate peanut butter cake even better? By adding a layer of all-natural peanut butter and making it vegan! Then take it up one more notch by making it a mini cake. This recipe doesn't just make one mini cake but four. I know what you're thinking..."So what? who needs four mini chocolate peanut butter cakes?" Well I do, Hubbs does and anyone else with taste buds.
makes 4 mini cakes in 8oz ramekins
- 3.5 ounces (100g) Vegan Semi-Sweet Chocolate ( I like these)
- 2 ½ tablespoons Vegan Butter
- ⅓ cup Whole Cane Sugar
- ⅓ cup Applesauce
- ⅔ cup Whole Wheat Flour
- ¼ teaspoon Salt
- ¼ teaspoon Baking Soda
- 4 tablespoons natural Peanut Butter (make your own--> see notes below)
- Vegan Chocolate chips (optional)
- Preheat oven to 375F (190C). Grease and flour 4 ramekins.
- Over medium-low heat, while constantly stirring, melt chocolate, butter, and sugar. Be careful not to burn the chocolate.

Allow melted mixture to cool slightly then add remaining ingredients and mix together with a wooden spoon or spatula.

Add ¼ cup of the chocolate batter to 4 ramekins (can be anywhere between 6 - 8 ounces in size)

Add 1 tablespoon Peanut Butter to each and top with remaining chocolate batter (about 1 tablespoon for each ramekin) on top. Spread dough using finger or spoon to outer edge.

Press a couple of chocolate chips into the dough (optional). Bake for 20 minutes.

Remove from oven, allow to cool and enjoy!

Recipe Notes
1) You don't need store bought peanut butter to make this. Just buy roasted(without oil), unsalted peanuts blend in a food processor for 10 minutes until smooth. Voila! Healthy peanut butter with any additives or sugar! 2) Don't over mix the brownie dough. Never use a mixer to make brownies!

Hi Jo,
You could probably even place the ingredients into a smaller cake form then increase the bake time to around 30-35 minutes if you are looking for a larger cake. Otherwise I like the idea of having my own personal cake for my birthday :) No sharing!
